Banana muffin - gluten free

Yield : 6 medium sized muffin
Source : Saffron hut & Easy cooking

Ingredients: 

Sorghum flour ( jowar) ----> 1/4 cup

Oats powdered (gluten free) -----> 1/2 cup

Banana ripe (Dole) -----> 1

Egg ----> 1

Baking powder ---> 1/2 tsp

Baking Soda -----> 1/2 tsp

salt  ----> 1/4 tsp

Xanthan gum ----> less than 1/4 tsp

Vanilla essence ----> 1/4 tsp

Sugar ----> 5 tbsp

Butter -----> 2 tbsp + 2 tsp

Walnut ( chopped ) ----> less than hand full

Chocolate chips ----> 6 nos.


Procedure:

1) Take a deep bottom bowl add in the flour,baking powder,baking soda,Xanthan gum ,salt  and mix well.

2)Take  another bowl add butter(room temperature & melted) , mashed banana, egg(beaten) ,vanilla essence,sugar.Beat them into a nice homogeneous mixture.

3)Preheat the oven @ 180 degree C.

4)Now fold in the dry ingredients  into the wet stuff.

5)Pour the mixture into the greased muffin moulds and top them with chopped walnuts and chocolate chips and bake them @ 180 degree C for about 20 -25 mins.


Note:

1) The original recipe calls for all purpose flour(maida),regular sugar.

2) Used Xanthan gum for binding .

3) Used regular rolled oats.Just powdered them.

4) Used powdered palm sugar.


Verdict:

       Delicious fluffy muffins with the sweetness of banana
