Guchhi da Murg (Mushroom Chicken )

Ingredients:
---------------------
  • Chicken --> 250 gms
  • Mushroom --> 150 gms
  • Onion --> 2 nos.
  • Tomato --> 2 nos.
  • Ginger paste --> 1 tsp
  • Garlic paste --> 1 tsp
  • Black pepper powder --> 1 tsp
  • Coriander powder --> 2 tsp
  • Garam masala powder --> 1/2 tsp
  • Coriander leaves --> 1 cup
  • Water --> 1 & 1/2 cups
  • Salt --> as per taste 
  • Oil --> 2  Tbsp
Method:

  1. Heat the oil in a deep pan on medium heat.When hot add the chopped onions & cook till they are softened & then add the ginger-garlic paste.Fry for a minute.
  2. Now add in all the powders - coriander powder,black pepper powder,garam masala powder and the chopped coriander leaves(cilantro leaves) 3/4th cup.
  3. Add the cleaned chicken pieces and fry till the chicken pieces turn from pink to whitish in color.
  4. Add water and salt and cook it covered for about 10-15 minutes.
  5. Remove the lid and add chopped mushroom & tomatoes and cook covered for about 3 minutes.
  6. Now add  the remaining chopped coriander leaves(cilantro leaves) 1/4 cup and stir it for 1 minute & remove from heat and serve hot with rotis,chapati or bread.

    Tangy Pepper Chicken

    Ingredients:
    -----------
    Chicken --> 8 medium pieces( with bones)
    Onions --> 3 nos. (medium size)
    Ginger paste --> 1 tsp
    Garlic paste --> 1 tsp
    Tamarind paste --> 1 tbsp
    Black pepper powder --> 1 & 1/2 tsp
    Coriander leaves(cilantro) --> 3/4 cup (finely chopped)
    Sugar -->1 tsp
    Water -->1/4 cup
    Oil -->1 tbsp


    Method:
    --------
    Wash and clean the chicken thoroughly.
    Heat oil add chopped onions and saute till pink & translucent.Now add the ginger-garlic paste and saute till the raw smell is completely gone.
    Add the chopped coriander leaves(1/2 cup) and saute for a second.
    Add the chicken pieces and fry till the outer covering gets browned.
    Add tamarind paste,pepper powder and water and cook the chicken on a low flame till the gravy becomes semi-dry and the chicken is well cooked.
    Now add in the sugar and fry for a minute.
    Remove from heat & garnish with the remaining chopped coriander/cilantro leaves.

    Notes:
    • Pepper powder can be increased or decreased as per ones taste
    • Add more water if required.
    • This a semi-dry dish best served with fried rice or jeera rice.

    Saagwal Murg (Palak chicken)

    Ingredients:
    -------------------------
    • Chicken--> 7 drummettes
    • Palak/Spinach --> 1 bunch
    • ginger paste --> 1/4 tsp
    • garlic paste -->1/4 tsp
    • Onions --> 1 & 1/2
    • Tomatoes --> 2
    • Curds --> 1tbsp
    • Jeera powder --> 1/4 tsp
    • Corainder powder --> 1/2 tsp
    • Red chilli powder --> 1 tsp
    • Pepper powder --> 1/4 tsp
    • Garam masala powder --> 1/4 tsp
    • Kasuri methi - ->1/4 tsp
    • Cashewnut-->5
    • Oil
    • salt


    Method:
    -----------------
    1)Clean palak and chop them.Microwave the chopped palak/spinach for 4 mins.Then grind them along with the cashewnuts into a fine paste.
    2) Marinate the cleaned chicken drummettes with curds and all the above spice powder for 1 hour & keep aside.
    3) Heat oil in a frying pan.Add ginger and garlic paste and fry till the raw smell is completely gone.
    4)Then add chopped onions and fry till light pink in colour.
    5)Add to this the marinated chicken and fry for 7 minutes till the chicken is lightly roasted.
    6)Add the chopped tomatoes and little water and fry till the chicken is well cooked.
    7)Add the spinach/palak paste and cook for another 5 minutes.
    8)At the end add kasurimethi and remove from the stove top.
    9)Serve this with rice or roti.
