Chocolate Chip Cookies with coconut and oats (Eggless)

         i want to start my first post of 2011 with the crunchy chocolate melting cookie.i had seen this here  &  had bookmarked it long back. Today i got to bake them and i must tell you that they were so good.Just re-producing the ingredients and method with slight changes according to my requirements.i want to say thanks to sunita for such a wonderful recipe


Ingredients:
-----------------

Whole wheat flour( atta) --> 3/4 cup
Rolled oats --> 3 Tbsp
Dessicated Coconut --> 4 Tbsp
Cinnamon powder --> 1/2 tsp
Soda --> 1/3 tsp
Chocolate Chips --> 75 gms
Sunflower Oil --> 5 Tbsp
Soft dark brown sugar --> 5 Tbsp
Water --> 2 Tbsp
Flaxseed Powder --> 1 Tbsp
Warm Water --> 3 Tbsp

Method:

  1. In a bowl, whisk together the flour, oats, soda, dessicated coconut, cinnamon powder and chocolate chips.
  2. In another bowl, add the oil, sugar, water and break in the egg. Mix everything lightly with a spoon till the sugar is free of lumps.
  3. Make a well in the centre of the flour mixture and tip in the flaxseed mixture(mix 1tbsp of flaxseed powder and 3 tbsp of warm water). Fold in , preferable with a rubber spatula or mix lightly with your fingertips, till everything is just moistened. Do not over mix.
  4. Cover the bowl with a plastic wrap and chill in the refrigerator for about an hour.
  5. Pre heat the oven at 180 deg C and line a baking tray with foil.
  6. With damp hands, make 18 equal sized balls of the mixture and place them on the prepared tray apart from each other ( if you are baking in batches, return the unused cookie dough back to the fridge). Lightly flatten the balls with your fingertips.
  7. Place the tray in the centre of the pre heated oven and bake for about 20 - 25 minutes or till the top is firm and the edges begin to darken slightly.
  8. Cool on the tray for a few seconds. Gently peel them from the foil and transfer to a rack to cool completely before storing in air tight containers.
Note:
  • My Oven Wattage is 1000 so the required time is 25 mins. So the baking time differs from oven to oven
  • Can use 1 egg as per the original recipe instead of flaxseed powder mixture

    Oats Semolina Idli \ Oats Rawa Idli \ Oats Rava Idli

    Ingredients
    --------------

    Oats (roasted and powdered) --> 1 cup
    Rawa (roasted) -->  1 cup
    Curds --> 1 cup
    White sesame seeds (roasted) --> 3 tsp
    Black gram (Urad dal ) -->1 tbsp
    Bengal gram (Channa dal ) --> 1 tbsp
    Curry leaves --> 3 sprigs
    Green chillies (chopped) --> as required
    Mustard seeds --> 1 tsp
    Hing --> pinch
    Oil --> 1/2 tsp
    Water--> as needed
    Salt --> as per taste
    Cashew (broken) --> 5 nos.
    Eno fruit salt --> 1 tsp



    Method:
    ----------
    1) Heat oil and add mustard seeds,hing,bengal gram dal,black gram dal,cashew nut and allow it to splutter.

    2) Now add the green chillies and curry leaves and saute for a minute.

    3)Take a bowl add in the roasted and coarsely powdered oats and roasted rawa. Add the above seasoning and mix well.Add the roasted sesame seeds.Now add the curds and required amount of water.The consistency should be same as we prepare the batter for rava idli.Keep the mxture aside for 15 minutes.

    4)In the meantime grease the idli moulds.

    5)Just before pouring the batter into the idli moulds add the fruit salt into the batter and mix well and then pour into the moulds.

    6)Steam the idlis for 10 - 15 minutes and serve them hot with chutney or sauce of your choice.

    Notes:

    •   the above batter yielded 34 mini idlis.
    •    taste similar to rava or semolina idli.

    Prawn Sukke / Kolambi Sukke /Sungta Sukke

    Ingredients:
    --------------
                Prawns/Shrimp --> 30 nos. (small sized)
                Onions --> 2 medium size
                Coconut grated --> 3 Tbsp to 4 tbsp
                Red chilli powder --> as per taste
                Pepper powder --> as per taste
                Coriander powder --> 1 tsp
                Garam masala powder --> 1/4 tsp
                Turmeric powder --> 1/4 tsp
                Garlic --> 4 cloves ( large)
                Poppy seeds --> 1/2 tsp
                Fennel seeds --> 1 tsp
                Salt --> as per taste
                Oil --> 1 tsp
               Coriander leaves/Cilantro leaves

    Method:
    ----------
    1. Clean the prawns and de-vein them.  
    2. Heat oil in a saucepan, add poppy seeds & fennel seeds and saute them until you get a nice aroma
    3. .Now add the finely minced garlic and when it turns slightly brown add the chopped onions and fry till golden brown.  
    4. Add the prawns and cook them on medium high flame for about 3-4 mins. 
    5. Reduce the heat and add the dry powders - red chilli ,turmeric,garam masala,pepper,corainder powder,salt & grated coconut.
    6. Mix well &  cook the prawns till done.Keep stirring to avoid the mixture sticking to the bottom of the saucepan.If you feel the mixture is getting burnt you can sprinkle little water. 
    7.  Serve hot garnished with chopped coriander leaves/cilantro leaves.
