Oats Semolina Idli \ Oats Rawa Idli \ Oats Rava Idli

Ingredients
--------------

Oats (roasted and powdered) --> 1 cup
Rawa (roasted) -->  1 cup
Curds --> 1 cup
White sesame seeds (roasted) --> 3 tsp
Black gram (Urad dal ) -->1 tbsp
Bengal gram (Channa dal ) --> 1 tbsp
Curry leaves --> 3 sprigs
Green chillies (chopped) --> as required
Mustard seeds --> 1 tsp
Hing --> pinch
Oil --> 1/2 tsp
Water--> as needed
Salt --> as per taste
Cashew (broken) --> 5 nos.
Eno fruit salt --> 1 tsp



Method:
----------
1) Heat oil and add mustard seeds,hing,bengal gram dal,black gram dal,cashew nut and allow it to splutter.

2) Now add the green chillies and curry leaves and saute for a minute.

3)Take a bowl add in the roasted and coarsely powdered oats and roasted rawa. Add the above seasoning and mix well.Add the roasted sesame seeds.Now add the curds and required amount of water.The consistency should be same as we prepare the batter for rava idli.Keep the mxture aside for 15 minutes.

4)In the meantime grease the idli moulds.

5)Just before pouring the batter into the idli moulds add the fruit salt into the batter and mix well and then pour into the moulds.

6)Steam the idlis for 10 - 15 minutes and serve them hot with chutney or sauce of your choice.

Notes:

  •   the above batter yielded 34 mini idlis.
  •    taste similar to rava or semolina idli.

Prawn Sukke / Kolambi Sukke /Sungta Sukke

Ingredients:
--------------
            Prawns/Shrimp --> 30 nos. (small sized)
            Onions --> 2 medium size
            Coconut grated --> 3 Tbsp to 4 tbsp
            Red chilli powder --> as per taste
            Pepper powder --> as per taste
            Coriander powder --> 1 tsp
            Garam masala powder --> 1/4 tsp
            Turmeric powder --> 1/4 tsp
            Garlic --> 4 cloves ( large)
            Poppy seeds --> 1/2 tsp
            Fennel seeds --> 1 tsp
            Salt --> as per taste
            Oil --> 1 tsp
           Coriander leaves/Cilantro leaves

Method:
----------
  1. Clean the prawns and de-vein them.  
  2. Heat oil in a saucepan, add poppy seeds & fennel seeds and saute them until you get a nice aroma
  3. .Now add the finely minced garlic and when it turns slightly brown add the chopped onions and fry till golden brown.  
  4. Add the prawns and cook them on medium high flame for about 3-4 mins. 
  5. Reduce the heat and add the dry powders - red chilli ,turmeric,garam masala,pepper,corainder powder,salt & grated coconut.
  6. Mix well &  cook the prawns till done.Keep stirring to avoid the mixture sticking to the bottom of the saucepan.If you feel the mixture is getting burnt you can sprinkle little water. 
  7.  Serve hot garnished with chopped coriander leaves/cilantro leaves.

    Ingredients:
    --------------
    • Watermelon --> 1 cup
    • Honey --> 1 tsp
    • Ginger juice --> 1/4 tsp
    • Chat masala --> pinch


    Method:
    -------------
    1. Blend watermelon(the pink part only) in a blender until smooth.
    2. Now to this add honey,ginger juice and chat masala and serve it chilled.

    Orange Sponge Cake (Eggless)

    Ingredients:
    --------------
    • Cake flour --> 1 & 3/4 cups
    • Sugar --> 1/2 cup
    • Orange squash --> 1/2 cup  (see notes below)
    • Pepsi/Cola --> 5 Tbsp
    • Butter --> 4 Tbsp
    • Vinegar --> 1 Tbsp  (see notes below)
    • Baking powder --> 1 tsp
    • Baking soda --> 1 tsp
    • Orange essence --> 1 tsp
    • Salt --> 1/4 tsp 
    • Chocolate chips --> 1/4 cup

    Method:
    ---------
    1. Grease an 8" inch cake pan.Pre-heat the oven @ 180 degree C( 350 degree F) for 10 mins.
    2. Take a bowl mix in the dry ingredients :- cake flour,baking powder,baking soda and salt and mix thoroughly.
    3. In another bowl mix in the wet ingredients :- butter,orange juice,orange essence,pepsi or cola,vinegar.
    4. Now slowly fold in the dry ingredients into the wet ingredients.Take care not to overmix.
    5. Lastly add the chocolate chips to the batter.
    6. Now pour the ready cake batter into the greased pan and bake it for 40 mins @ 180 degree C ( 350 degree F).
    7. Check whether the cake is done by inserting a tooth pick.If the tooth pick comes out clean the cake is done.
    Notes :
    • used store bought processed sweetened orange squash to which sugar is already added.If you are using unsweetened orange squash you may want to increase the quantity of sugar as required.
    • used sweetened  chocolate chips.
    • used apple cider vinegar.
    Verdict:
    -------
    Cake was delicious,spongy and just like store bought.

    Guchhi da Murg (Mushroom Chicken )

    Ingredients:
    ---------------------
    • Chicken --> 250 gms
    • Mushroom --> 150 gms
    • Onion --> 2 nos.
    • Tomato --> 2 nos.
    • Ginger paste --> 1 tsp
    • Garlic paste --> 1 tsp
    • Black pepper powder --> 1 tsp
    • Coriander powder --> 2 tsp
    • Garam masala powder --> 1/2 tsp
    • Coriander leaves --> 1 cup
    • Water --> 1 & 1/2 cups
    • Salt --> as per taste 
    • Oil --> 2  Tbsp
    Method:
    ---------
    1. Heat the oil in a deep pan on medium heat.When hot add the chopped onions & cook till they are softened & then add the ginger-garlic paste.Fry for a minute.
    2. Now add in all the powders - coriander powder,black pepper powder,garam masala powder and the chopped coriander leaves(cilantro leaves) 3/4th cup.
    3. Add the cleaned chicken pieces and fry till the chicken pieces turn from pink to whitish in color.
    4. Add water and salt and cook it covered for about 10-15 minutes.
    5. Remove the lid and add chopped mushroom & tomatoes and cook covered for about 3 minutes.
    6. Now add  the remaining chopped coriander leaves(cilantro leaves) 1/4 cup and stir it for 1 minute & remove from heat and serve hot with rotis,chapati or bread.

      Low fat Pineapple cake

      Ingredients:
      ------------------
      Cake flour --> 1&1/2 cups
      Butter --> 3 Tbsp
      Eggs --> 2 nos.
      Sugar --> 3/4 cup
      Pineapple puree  --> 1 cup
      Baking powder --> 1 tsp
      Baking soda --> 1 tsp
      Salt --> 1/4 tsp
      Almonds  --> 1/2 cup
      Pineapple essence -->2 tsp 

      Method :
      -------------
      Pre-heat the oven to 180 degree C( 375 degree F).
      Cream butter,pineapple puree,sugar.
      Add eggs one at a time and beat thoroughly.
      In another bowl sift together Cake flour,Baking powder,Baking soda and salt.
      Add the dry ingredients to the creamed mixture one heaped tablespoon at a time.
      Add pineapple essence & chopped almonds and blend well but don't over mix.
      Pour the batter into a greased 8" round pan and bake @ 180 degree C( 375 degree F) for 50 mins or until a toothpick inserted into cake comes out clean.

      Notes
      • Can increase or decrease sugar as per the sweetness of the pineapple puree.

      Tangy Pepper Chicken

      Ingredients:
      -----------
      Chicken --> 8 medium pieces( with bones)
      Onions --> 3 nos. (medium size)
      Ginger paste --> 1 tsp
      Garlic paste --> 1 tsp
      Tamarind paste --> 1 tbsp
      Black pepper powder --> 1 & 1/2 tsp
      Coriander leaves(cilantro) --> 3/4 cup (finely chopped)
      Sugar -->1 tsp
      Water -->1/4 cup
      Oil -->1 tbsp


      Method:
      --------
      Wash and clean the chicken thoroughly.
      Heat oil add chopped onions and saute till pink & translucent.Now add the ginger-garlic paste and saute till the raw smell is completely gone.
      Add the chopped coriander leaves(1/2 cup) and saute for a second.
      Add the chicken pieces and fry till the outer covering gets browned.
      Add tamarind paste,pepper powder and water and cook the chicken on a low flame till the gravy becomes semi-dry and the chicken is well cooked.
      Now add in the sugar and fry for a minute.
      Remove from heat & garnish with the remaining chopped coriander/cilantro leaves.

      Notes:
      • Pepper powder can be increased or decreased as per ones taste
      • Add more water if required.
      • This a semi-dry dish best served with fried rice or jeera rice.

      Instant Sweet & Sour Mango chutney (Microwave)

      Ingredients:-
      -----------
      Raw mango(grated) --> 2 nos.(medium size)
      Jaggery/Brown Sugar --> 1/4 to 1/2 cup ( depends on the tanginess of the mangoes)
      Turmeric -->1/2 tsp
      Red chilli powder --> 2 to 3 tsp
      Fenugreek powder --> 1/4 tsp
      Mustard powder -->1/4 tsp
      Asafoetida(hing) --> pinch
      Oil --> 1 Tbsp
      Salt --> to taste

      Method:-
      ---------
      Wash and  grate the mangoes finely.
      Mix salt,turmeric,red chillies powder,asafoetida,mustard powder,fenugreek powder to the grated mangoes and keep it aside for 5 mins.
      Cook the grated mangoes for 5 mins  at high in a microwave safe dish and remove from the oven.
      Now add jaggery/brown sugar and cook the grated mangoes at high for another 5 mins in a microwave safe dish.Remove from the oven.
      Heat the oil and add it to the cooked grated mangoes.Allow it to cool and transfer  to an air tight container.
      Will last one week  in the fridge.

      Mango Cake

      Ingredients:-
      ---------------
      • Cake flour-->1 & 1/2 cups
      • Mango puree-->1 cup
      • Baking powder-->3/4 tsp
      • Baking Soda-->3/4 tsp
      • Butter-->3 tbsp
      • flaxseed powder-->2 tbsp
      • sugar--> 3/4cup
      • walnut-->1/2cup
      • salt-->1/4 tsp
      • cardamom-->2 tsp

      Method:-
      -----------
      1) Pre-heat oven to 180 degree C for 10 mins.Grease 8" round or square baking pan.

      2)In a bowl sift together cake flour,baking powder,baking soda,salt and cardamom powder.Mix well.

      3) Cream together butter,flaxseed powder,sugar & mango puree till light .

      4)Blend the above dry ingredients into the creamed mixture for few seconds and then fold in the chopped walnuts.

      5)Pour the batter into the prepared pan and bake it for 45 mins @ 180 degree C ( 350 degree F) or until done.

      6) Allow it to cool for 20 mins and serve.

      Notes:-
      -------

      •  i used double-acting baking powder.
      • Sugar can be added as per ones choice say starting from 1/2 cup to 3/4cup.

      Masala Egg Bhurji

      Ingredients:
      ------------

      Eggs--> 3 nos.
      Onion-->1 cup (finely chopped)
      Tomato-->1 cup(finely chopped)
      Ginger paste-->1 tsp
      Garlic paste-->1 tsp
      Coconut-->3 Tbsp(grated)
      Fennel seeds-->1 tsp
      Cumin seeds-->1 tsp
      Poppy seeds-->1 tsp
      Red Chilly powder-->as per taste
      Coriander powder-->1 tsp
      Garam Masala-->1/2 tsp
      Butter/Oil-->2 tsp
      Salt-->as per taste
      Coriander leaves for garnishing

      Method:
      --------

      1)Dry roast fennel seeds,cumin seeds and poppy seeds and coconut till you get the aroma of the roasted spices.
      2)Cool and grind the above masala with red chilly powder and coriander added to it.No need to add water it should be a dry masala.
      3)Heat oil in a saucepan,add ginger & garlic paste ,chopped onions & fry till onions are traslucent.
      4)Add in the ground dry masala and saute for few seconds.
      5)Add chopped tomatoes and cook till mushy.
      6)Add garam masala and fry for a second.
      7)Now pour in the beaten eggs and allow it to cook for few seconds on a low flame.Then mix it thoroughly so that the eggs gets coated with the spices.Again allow it to cook for few minutes until done.
      8)Garnish with chopped corainder/cilantro leaves & serve with rice and dal or bread toast.
